Rice Crispies Pops

Oh, Rice Crispies Treats… I love them so much. My childhood wouldn’t be the same without them and, let’s be real for a second here, neither would my adult life. I actually haven’t made them in at least a good 10 years, though. So I thought I should break out that old favorite recipe of mine and make these as a special treat for Sunday brunch with friends. Only problem is I couldn’t find that old favorite recipe… Good thing they have it inside the cereal box!

Here’s a picture of everything I bought to make these. I already had butter and long popsicle sticks at home.

And there’s the directions! Although you probably can’t read them (I know I can’t) so let’s go through those together.

Directions:

  • Start by melting the butter in a large saucepan on low heat.

  • Add the entire bag of marshmallows to the melted butter and slowly let them melt. Don’t touch that heat to make them melt faster! Be patient. You might notice I started with a plastic spoon and switched to a silicone spatula. This stuff gets really sticky!

  • Once it’s melted and hot, add the Rice Crispies, stir until well coated, and transfer to a parchment-lined baking sheet. I added M&M’s to mine for color and a little of that chocolately goodness. You may add them, or leave them out. Spread them on the baking sheet quickly because the more the mixture cools, the more difficult it will be to spread them. As you may have noticed, I also wrapped my hand in a piece of parchment to help spread them. It’s so much easier than trying to use the spatula!
  • All you have to do now is let them cool, cut them, and enjoy! I cut mine into small squares and stuck popsicle sticks in them to make little Rice Crispies pops. It was that easy.
